Find the Flavour of Fall in These Apple Recipes


Apple picking. It’s a long-time autumn family tradition for many and a fun way for families to kick off the season. But do you find yourself with more apples than you and your loved ones could possibly eat and wonder what you are going to do with them all? Why not add apples when you cook or bake?

There are some great ways you can use apples in cooking. You can start off by making apple puree. This crock pot recipe makes a batch large enough that could be divided and stored for future use. We like to add apple puree to pancakes by simply adding some to the batter (approximately one cup of puree for a batch that makes 12 pancakes. Add a little cinnamon to enhance the apple flavour).

You can also add chopped apple to soups, like this butternut squash and apple harvest soup, or to other dishes, such as stuffing, pasta, sandwiches and salads.

My favourite way to use apples is in baking. Sometimes it’s as simple as adding applesauce to carrot muffins or a zucchini loaf (I simply use the applesauce in place of the oil listed in the recipe). But there are also some recipes I have that are just simply delicious, and I would love to share them with you! So without further ado, here are some apple recipes that I’m sure will make you want to get in the kitchen and bake!

Apple Crisp

Ingredients:

4 apples, peeled, cored and sliced

½ cup all-purpose flour

¼ cup granulated sugar

¼ cup brown sugar

½ tsp cinnamon

¼ cup butter or margarine (cut into pieces)

⅓ cup rolled oats

Directions:

Preheat oven to 350F.

Place apples in an 8 inch or 9 inch square, greased baking pan.

Combine flour with sugars and cinnamon (by hand or in food processor). Cut in butter until it is in tiny bits. Stir in oats. Sprinkle on top of apples.

Bake for 45 minutes or until apples are very tender.

Apple Cheesecake

Ingredients:

Crust:

½ cup butter

⅓ cup granulated sugar

1 cup all-purpose flour

Cream together butter and sugar. Add flour and mix well. Press onto bottom and one inch up the sides of a nine inch springform pan (make sure to coat pan in non-stick cooking spray).

Filling:

8 oz. cream cheese

¼ cup sugar

1 egg

1 tsp vanilla

Mix together cream cheese and sugar. Add egg and vanilla; blend well. Spoon mixture onto crust.

Topping:

3 apples, cored and thinly sliced

¼ cup sugar

½ tsp cinnamon

Toss apples with cinnamon and sugar. Arrange apple slices in an overlapping pinwheel pattern over the cream cheese filling.

Directions:

Bake in a preheated 450F oven for 10 minutes.

Reduce heat to 400F and continue baking for 25 minutes.

Remove from oven and cool to room temperature before refrigerating.

Apple-Orange Coffee Cake

Ingredients:

4 apples, cored, peeled and cut into wedges

5 tbsp sugar

5 tsp cinnamon

1 cup oil

4 eggs

¼ cup fresh orange juice

1 tsp grated orange rind

1 tbsp vanilla

3 cups all-purpose flour

1 tbsp baking powder

1 tsp salt

1 cup granulated sugar

1 cup brown sugar

Directions:

Preheat oven to 375F. Grease 9” x 12” cake pan.

Combine apple wedges with 5 tbsp sugar and 5 tsp cinnamon; set aside.

In a large bowl, beat together oil, eggs, orange juice, orange rind and vanilla.

Sift flour, baking powder, salt and sugars. Add to oil and egg mixture and stir until well blended. Batter will be very thick. Spread half the batter into the pan; arrange half of the apple wedges on the batter. Cover with the remaining batter and arrange the rest of the apple wedges on top.

Bake for one hour or until a tester comes out clean.
