Breakfast for Dinner: Broccoli, Ham and Mozzarella Egg Bake
I came across this recipe in my search for some breakfast for dinner ideas. It looked pretty yummy so I was really looking forward to trying it, and just as I suspected it was as tasty as I thought it would be! It reminded me a little bit like a quiche without crust.
For some added flavour I suggest including some sautéed onion and garlic to the mixture (I love garlic, so I would probably add three or four small to medium cloves, diced or minced. If you don’t want it too garlicky one or two cloves will suffice).
INGREDIENTS
4-6 cups broccoli florets, cooked tender-crisp
1-2 cups diced ham (1/2 – 1 lb)
1 cup grated Mozzarella
8-10 eggs, beaten
The original recipe lists 1 tsp of Spike Seasoning but it is not a seasoning I had on hand and have not seen it in store. Perhaps it’s not available in Canada? I’m not sure to be honest, so I used some salt and pepper to taste and 1 tsp Italian seasoning.
Optional additions to this recipe are 1/3 cup thinly sliced green onion to top with and some sour cream to serve with.
DIRECTIONS
Heat oven to 375F. Grease 9” x 12” casserole dish with non-stick spray.
Bring medium-sized pot of water to a boil and cook broccoli for two to five minutes; drain well. Dice ham while broccoli drains.
Layer broccoli, ham and mozzarella in the casserole dish. Sprinkle with seasoning and pour beaten egg over. Use a fork to stir the mixture until all ingredients are covered in egg.
Bake for 35-45 minutes, or until all the mixture is set and the top is starting to lightly brown.
