The Best Chewy Chocolate Chip Cookies!

I LOVE chocolate chip cookies! Well, really, if it’s a baked good that is made with chocolate chances are I’m going to love it. But, I must say that chocolate chip cookies are probably my favourite baked goodie! For years I have been trying to find the perfect chewy chocolate chip cookie recipe. Wanna know a little secret? I want to be the mom that makes the BEST chocolate chip cookies. ( Confession…I’m a bit of a baking geek, hence my aspiration to be the mom who bakes the best chocolate chip cookies. But I digress…)

Last year I continued my search for the ultimate chewy chocolate chip cookie recipe and I came across this one: http://www.thekitchenmagpie.com/chocolate-chip-cookie-recipe-thick-n-chewy/. I decided to give it a try to bring to a BBQ potluck I was going to. Yes, I used my friends and their kids as my guinea pigs! Of course, before bringing them with me to the potluck I just HAD to test them out myself. I was extremely pleased to find that I had finally found the best chewy chocolate chip cookie recipe that I have ever tried! And so now I share it with you!

INGREDIENTS

  • 2¼ cups of all-purpose flour

  • 1 tsp baking soda

  • ½ cup of butter

  • 1 tsp salt (if using unsalted butter)

  • 1 cup of packed brown sugar

  • ½ cup of granulated sugar

  • 1½ tsp vanilla

  • 2 eggs

  • 2 cups of semi-sweet chocolate chips

INSTRUCTIONS

  1. Set oven to 350 degrees

  2. Cream together your butter and sugar until it’s light and fluffy. Add in the eggs and vanilla, mixing thoroughly. Beat in the flour, baking soda and salt.

  3. When that is done, fold in the two cups of chocolate chips by hand, and prepare to put them on some parchment paper lined cookie sheets.

  4. Drop by rounded teaspoonful onto the baking sheets.

  5. Bake at 350 for 10-12 minutes, until golden brown and slightly underdone. Cool on the sheets completely.

A couple of my own notes: if you are using butter that is not at room temperature put it in the microwave to soften it, but not melt it. Also, if you are using a convection oven you can set the temperature to 325 degrees and bake for 8-10 minutes.
